Two Delicious Lemon Cake Desserts

Sunday dinners and holidays were always a special treat at my mother-in-law's house. She was famous throughout the county for her wonderful desserts. Here are two lemon cake recipes she enjoyed making. Sadly, we lost her in April 2008, but these and other recipes bring us sweet memories of her joy in serving her family nutritious meals and delicious desserts. Happy mealtimes bring a family together through memories shared. Build some memories for your family and try these wonderful lemony desserts today.

Lemon Meringue Cake
(makes 12-16 servings)

1 pkg. Duncan Hines Lemon Supreme Deluxe Cake Mix
1 regular-size package lemon pudding and pie filling
2 egg whites
1/4 cup sugar

Using 8 inch round cake pans, make and cool cake as directed on the label. Cook lemon pudding and pie filling as directed for pie filling. Cool 30 minutes according to the box instructions; stir several times. Beat egg whites until frothy; gradually add sugar; beat until stiff but not dry. Split each cake layer into 2 thin layers. Stack on cookie sheet or oven-proof plate, spread lemon pudding between layers and on top of cake. Spread meringue around sides of cake. Bake at 450 degrees F for about 5 minutes, until light brown. Cool to room temperature before serving. Store cake in the refrigerator.

Lemon Pound Cake

1 package Duncan Hines Lemon Supreme Deluxe Cake Mix
1 Package lemon instant pudding mix (4 serving)
1 tbsp. lemon juice
1/2 cup Crisco oil
1 cup water
4 eggs
10 lemon drop candies

Blend all ingredients in large bowl, then beat at medium speed for 2 minutes. Bake in a greased and floured 10-inch tube pan at 350 degrees F for about 45-55 minutes, until center springs back when touched lightly. Cool right side up for about 25 minutes, then remove from pan.

Glaze: Blend 1 cup confectioner's sugar with either 2 tbsp. lemon juice. Drizzle over cake. Press lemon drops into the glaze at equal distances.

Southern Living Comfort Food - A Delicious Trip Down Memory Lane

What is the first thing that comes to mind when someone asks  you what you favorite comfort food is?  Mine is baked macaroni and cheese that is just a little bit crunchy.

I love to eat, so when the book Southern Living Comfort Food  came across my desk I just had to check it out.  After skimming the index I read the foreward which is almost as good as the recipes! 

Most of the 150 comfort food recipes are accompanied by full page color photographs.  Illustrations or photographs are particularly helpful to cooks like me who are curious about the final presentation.

The book covers:  comfort food classics, breakfast anytime, fresh from the garden, casseroles & beyond, soups & stews, desserts, and holidays & special occasions. 

My favorite comfort food, macaroni and cheese, is the first recipe in comfort food classics.  Macaroni and cheese takes on a whole new meaning with the Three-Cheese Pasta Bake.  This recipe is followed by more of my favorites including Gonzales Meat Loaf, Buttermilk Garlic Mashed Potatoes, Lemon-Garlic Roast Chicken With Sauteed Green Beans, The Perfect Burger, French Fries, Chicken Pot Pie, Classic Barbecue Ribs, Chicken-Fried Steak, Pork Chops, Cabbage, and Apples, and Mama's Fried Chicken.

Quick Tuna Patties - Light Delicious Meal For the Summer Months

Here in an excellent light snack/meal for the summer. You don't necessarily have to be a tuna lover to enjoy this meal, so don't let the name fool you. This is an impressive easy to make meal that will be easy to reheat and have your family asking what you did to make tuna taste so good! This is kind of a traditional meal at our house and we always looking forward to it especially when the aroma is lingering in around the house.

Serves: 4

* 1 tablespoon butter
* 2 tablespoons cut, green pepper
* 1 can condensed Cheddar cheese soup
* 1/2 cup cut celery
* 2 tablespoons chopped onion
* 2/3 cup evaporated milk
* 1 can tuna rinsed drained and flaked
* 1/4 teaspoon salt
* 1/8 teaspoon pepper
* 1 tablespoon lemon juice
* 1 pkg. refrigerator crescent rolls

Set oven top to medium. Melt butter in saucepan; add green pepper, onion and celery and cook until tender. Combine milk and soup; measure out 1/3 cup of sauce and add to celery mixture; heat remaining sauce to serve on Turnovers. Add tuna, seasonings and juice to celery mixture and mix. Form 2 crescent rolls into an rectangle (8" x 5"); repeat with remaining rolls. Put 1/4 of tuna mixture on 1/2 of each rectangle. Fold over other half and seal edges with fork. Cut 3 small slits on top of each. Back on uncreased cookie sheet in a preheated 400F oven about 20 minutes. Serve immediately with sauce.

Two Delicious Thanksgiving side dishes

My family goes to parents' home every Thanksgiving for a wonderful dinner at home with my mother. One of my favorite dishes my mother used to be Sweet Potato Casserole. The reason why I used to say "" will, every year, my mother, because I can take what you and I now brings me this and another dish, a bowl of salad to ask.

My mother is an assistant teacher at a primary school and Sweet Potato Casserole was one of the dishes at a potluck of another employee. My motherloved so much, got the recipe and we all have since Thanksgiving. It 'more like a sweet side dish.

Cranberry fruit salad recipe I was also a potluck staff available at the school where my mother works. It is sweet, tart, delicious and very simple, which is a big advantage at Thanksgiving! I hope you can find on your table, try this year.

Sweet Potato Casserole
Serving Size: 8

Two 16 Oz cans sweet potatoes
1 / 4 cup butter
3 / 4Cup sugar
1 / 2 tsp. Salt
2 eggs
1 / 2 cup milk
1 tsp. Vanilla

Topping:
1 cup Brown sugar
1 / 4 cup butter
2 tsp. Cinnamon
1 / 4 cup flour

Heat & drain potatoes. Mash with remaining ingredients and mix well. Pour into ungreased 9 "square glass baking. Combine all topping ingredients until crumbly. Pan Spread over potatoes and bake at 350 degrees for 40 minutes.

NOTE: May the day before and refrigerated before baking.

Cranberry Fruit Salad

a 12-oz pkg fresh cranberries
a 20-oz can pineapple chunks, drained
1 cup sugar
1 package. Mini marshmallows
a container mounted topping 12 oz

Put blueberries in a blender and process until finely chopped, drained pineapple and sugar and stir ads until trial. blueberry compound Put in a bowl and fold in whipped topping and marshmallows.
