Three Easy French Desserts You Can Make For Dinner Tonight

Many people think of French cooking as being fussy and time consuming, and while it is true that French haute cuisine takes food preparation to dizzying heights, most of the cooking going on in French kitchens on a daily basis is simple and to the point. After all, French people are just as busy as you are, and they too are looking for shortcuts and easy ways to get dinner on the table.

Here are three fine examples of what you might find for dessert if you were to eat at a French friend's house. Each of these is


Made with five or less ingredients, all of which you are likely to have on hand.

Require less than 20 minutes preparation time.

Will satisfy both with their elegant presentation and with their good taste

Creme caramel


1 1/3 cup sugar, divided
3 cups milk
1 teaspoon vanilla
4 large eggs

To make the caramel, place 2/3 cup of sugar in a small saucepan and wet with just enough water to dissolve it (about 1 tablespoon). Heat on medium heat, shaking the pan occasionally. The sugar will boil for a while until it starts to turn brown. As soon as it starts to turn brown remove it from the heat and pour the caramel into 6 ramekins.

In another saucepan, heat the milk with the other 2/3 cup sugar until it reaches a boil. Stir in vanilla. In a sturdy bowl, beat the eggs until light. Whisk in the hot milk, slowly at first to avoid coagulating the eggs. Whisk to completely mix.

Pour (or ladle if that works better for you) the milk mixture into the ramekins on top of the caramel. Place all 6 ramekins in a large oven proof dish. Fill the dish with water to about 2/3 the height of the ramekins.

Carefully place in 300° oven. Bake for 40 minutes to an hour (baking time can depend on the dishes used). The water should not boil during baking. The creme is done when it has set, which you can verify by inserting a knife.

Allow the cremes to cool completely, then cover with plastic wrap and refrigerate in their ramekins until serving time. To serve, run a knife along the outside of each creme, than turn over onto a dessert plate.

Makes 6 servings.

Petits pots de creme au chocolat


1 cup half and half
7 ounces dark chocolate, chopped
3 tablespoons strong coffee (you can use decaf of course)
3 eggs
2 tablespoons cognac (or replace this with two more tablespoons coffee

Bring the half and half to a boil on low heat. Remove from heat immediately and stir in the chocolate. Let rest for one minute to melt the chocolate, then blend until smooth. Stir in the coffee and mix until smooth again.

Beat the eggs until thick and lemon colored - about two minutes with a hand mixer. Add them to the chocolate and mix well, using the hand mixer if you wish. Add the cognac and once again mix until completely combined.

While it is still hot, pour the liquid into small dessert cups.

Refrigerate for at least two hours and even overnight if you wish. Serve cold and within 24 hours.

Makes 6 petits pots

Pommes Bonne Femme -- French Baked Apples


6 cooking apples (Pink Lady give delicious results)
3 tablespoons softened butter
3 tablespoons brown sugar
1 teaspoon cinnamon
1/4 cup heavy cream
toasted slivered almonds and red currant jelly (optional)

Remove the core from each apple leaving it whole (an apple corer is of course handy for this, but a paring knife will work if you cut carefully). Place the apples side by side in a baking dish.

Mix the butter, sugar, and cinnamon and spoon the mixture into the cored apples. Add two tablespoons of water to the baking dish and place in a 400°F oven for one hour. Bake until soft (may take longer if the apples are large).

Serve warm and drizzled with cream and any sauce on the bottom of the baking dish. For an authentic French touch, sprinkle with slivered almonds and add a dollop of red currant jelly.

Makes 6 servings

Kitchen Dangers For Kids

Most kids are fascinated by the kitchen. It is an exciting place with lots of gadgets and appliances, interesting smells and noises, and plenty of people working hard. But have you ever considered that it could be a dangerous place for kids? I will share a story that may reinforce that.

I grew up in a house with four brothers. We had to learn to fend for ourselves quite a bit when my mother went to work to help pay the bills. One of the things we learned by doing was cooking for ourselves.

Now I will be the first to admit, I am no gourmet. I was very limited in my creations to things such as frozen foods, canned foods, egg sandwiches, popcorn, etc. I also baked an occasional cake and a batch of chocolate chip cookies.

I was about 12 years old when I decided to deep fry some french fries. Now, what kid doesn't love hot french fries? I put the shortening in the frying pan and turned it on high, waiting for the grease to melt. A few days earlier, my father had put a television in the kitchen so we could watch it at the bar we had there. I became enamored of something that was on and sat down. Suddenly I heard a loud "poof" and jerked my head around to see very high flames coming out of the pan. Panicked, I did exactly what they advise you not to do; grab the pan and throw it toward the sink. Luckily for me, it landed in the sink and I turned on the water and watched the steamy mess for a few seconds.

After ensuring that the fire was out, I surveyed the damage; black flame marks on the ceiling, the worst smell in history, and a greasy mess everywhere. My mother came home and actually didn't get as angry as I thought she would for almost burning down her house. She did however tell me next time just put the lid on the pan!

The experience taught me to be much more careful in the kitchen when dealing with stoves and appliances. I recommend you spend some quality time with your children demonstrating how everything works and the importance of being careful while using the kitchen. Peace of mind is much easier to achieve if you have prepared your children for possible dangers.

Wok On - Wok Off!

Leeds Revo win fight for "wok-ers' rights" at noodle house REVOLUTION organised a protest in Leeds on Saturday against a chain of restaurants called Wok On and won the minimum wage and the right to unionise. Wok On had offered a 24-year-old member of REVOLUTION £4 an hour for working as a chef/waiter and employed a 14-year-old to leaflet in the city centre and paid her in noodles! Not only were Wok On refusing to pay the pittance of a minimum wage, never mind a living wage, but they were exploiting the fact that there's not even a minimum wage for under 16s and that so many youth now desperate for work to support themselves and their families. A group of around 20 protesters took to the streets just outside Wok On's main restaurant in Leeds They were demanding "equal wages for all ages" and telling the management "low pay no way". While the bulk of protesters stayed outside the shop, leafletting and talking with would-be diners, generally causing embarassment for the owners of the shop, and others confonted management with the accusations that they were underpaying workers, breaking laws and exploiting young people. The manager denied that he'd broken the law but admitted that he'd paid under-16s in noodles, arguing that it was a fair deal but that if he'd have known she was poor then he'd have paid her in cash instead. He agreed that he would pay all staff the legal minimum wage and that a trade union rep would be allowed to go in and speak to his staff next week ...

An Old Man's View on Kitchen Appliances

I am not only old, I am old fashioned. I remember the days when women did all the cooking and they did it without all the helpful gadgets that are so commonplace nowadays.

So whether you want it or not, here is an old man's view on kitchen appliances.

Growing up, I had never heard of a microwave, thank goodness. I still do not understand how it works. I do wonder what it is doing to my food though. Have you ever accidently left a piece of metal in one? I have. Someone brought me a sandwich from Hardees one day when I was working. I stuck it in the microwave not thinking much about the shiny paper it was wrapped in. Next thing you know, I see a fire in the microwave and a smell that could kill mice. Why does that happen anyway?

Regardless of if the microwave oven is a communist plot, I will go out on a limb and say, it has ruined women's ability to cook! I shouldn't even say cook anymore as we have entered the age of heating up. "What's for supper mom?" "Oh, I have your favorite tonight Johnny, Hungry Man Microwave Dinner!"

Go to the grocery, what do you see? A bunch of unhealthy crap stuck in boxes that says microwave ready. I don't know why anyone actually has a stove anymore. I guess it just came with the house.

And what is up with all the other stuff. Food processor? God forbid we have to actually use a knife and chop something. Bread Maker? No comment. How about those new pasta makers? The Godfather is rolling over in his grave.

I can't think of a reason to buy any appliance except a toaster. Now, that is one you can sink your teeth into (no pun intended). It performs a service that you can't do yourself unless you are Johnny from the Fantastic Four. Just don't stick your fork in it.

Ladies and I guess men also since we are in the liberation age. Give up all the kitchen appliances before it is too late. Learn how to use your hands and create your own masterpieces like our mothers and grandmothers did. Teach you daughter and (sigh) son to cook also as it will serve them well in the future. It will also give them a skill to pass on to their own children after you are long gone from eating processed, micro-waved foods.

In other words, "get rid of all kitchen appliances except the toaster"!

Slowcooker Old World Sauerbraten

Don't even consider stopping for fast food on your way home. Why would you even consider it when you can have this delicious Old World Sauerbraten waiting for you at home. Pop it in the refrigerator to marinate overnight then put it in the slowcooker the next morning. Whether you have a busy day at work, volunteering, running errands, ballgames, etc. this sauerbraten will not only have your house smelling wonderful, dinner will be almost ready when you get home. One of the best things about this roast is that you will have leftovers to use later in the week.

OLD-WORLD SAUERBRATEN

1 1/2 cups water, divided

1 1/4 cups cider vinegar, divided

2 large onions, sliced, divided

1 med lemon, sliced

15 whole cloves, divided

6 bay leaves, divided

6 whole peppercorns

2 tbsp Splenda

2 tsp salt

1 beef sirloin tip roast (3 lbs), cut in half

1/4 tsp pepper

12 sugar-free gingersnap cookies, crumbled

In a large resealable plastic bag, combine 1 cup water, 1 cup vinegar, half of the onions, lemon, 10 cloves, four bay leaves, peppercorns, Splenda, and salt; mix well. Add roast. Seal bag and turn to coat meat well. Refrigerate overnight, turn a couple of times.

Drain and discard marinade. Place roast in a slow cooker; add pepper and remaining water, vinegar, onions, cloves, and bay leaves. Cover and cook on low for 6 to 8 hours or until the meat is tender. Remove roast and keep warm. Discard bay leaves. Stir in gingersnaps. Cover and cook on high for 10 to 15 minutes or until gravy is thickened. Slice roast; serve with gravy.

Yield: 12 servings.

RHEA LOU'S BANANA CAKE

This recipe was found in an old church cookbook.

1/2 cup shortening
1 1/2 cups sugar
2 large eggs
2 cups flour
1/4 tsp baking powder
3/4 tsp baking soda
1 tsp salt
1/4 cup buttermilk
4 ripe bananas
1/2 cup chopped walnuts

Preheat oven to 350 degrees. In a large mixing bowl, cream shortening and sugar together. Add eggs to mixture and mix until creamy. Mash bananas with a fork and add to the creamy mixture. Add buttermilk and mix well. Sift together the flour, baking powder, baking soda, and salt. Gradually add to the creamy mixture, beating well after each addition. Stir in chopped walnuts. Grease and lightly flour a 13 x 9 x 2-inch baking pan. Pour batter into prepared pan and bake at 350 degrees for 35 to 40 minutes or until a toothpick inserted in the center comes out clean.

BANANA CAKE FROSTING

2 cups confectioners' sugar
2 tbsps butter
6-oz cream cheese
3 tbsp milk
1 tsp vanilla flavoring

In a mixing bowl, beat together the butter and cream cheese. Add confectioners' sugar and mix. Add milk to thin to spreading consistency. Stir in vanilla and mix well. Frost cake.

Safe Snow Shoveling Tips

Shoveling snow is a hard and potentially dangerous task. If you prepare properly and understand the safest ways to shovel then you will be able to prevent injury to your back and make shoveling a bit easier of a task.

It's also important to understand that shoveling is not for everyone. If you have a heart condition of any kind of have had a heart attack then you should not shovel. It is also recommended that people with low physical activity or those who rarely exercise abstain from shoveling. The stress shoveling can put on your heart is very real and the sudden stress on an inactive person's heart could cause a sudden and serious problem.

Prepare Properly
o Avoid caffeine and a heavy meal just before shoveling as both could add stress to your heart.
o Dress warm- wear cotton socks, insulated and waterproof boots and a warm hat that covers your ears. Also wear gloves that aren't too bulky so that you can get a good grip on the shovel.
o Bring a large water bottle with you outside which will help you remember to drink and make it more convenient as you wont have trail snow inside your home when you want to go get a drink.
o Make sure you stretch and go for a quick 1-2 minute walk to get your heart beat up. It will actually make the shoveling easier.

Snow Shoveling Tips
o Choose a plastic shovel over a metal shovel. Plastic shovels are lighter and will therefore be easier to use.
o Spray a silicone lubricant on the blade of the shovel. This will make the snow slide off and also prevent it form sticking.
o Do not throw snow over your shoulder; the safest way to shovel is to actually push the snow away from you.
o Shovel safely by bending legs slightly at the knee, letting thigh muscles do most of the pushing and lifting work; this will reduce strain on the heart and back.
o Use a shovel with a smaller blade. This will limit the weight of snow that you will be pushing and therefore limit your chances for injury.
o If you are at home during the start of a heavy snowfall, consider heading out to shovel after just a few inches. Going out a few times to shovel may be inconvenient and cold, but in the end it will be easier and quicker then shoveling many inches of heavy snow.
o The safest way to shovel to prevent injury is to always bend your knees slightly and gently lean over.
o IMMEDIATELY STOP SHOVELING IS YOU FEEL EVEN A LITTLE WEAK, OR DIZZY OR IF YOU CAN'T CATCH YOUR BREATH.

After Shoveling
o Make sure you re-hydrate yourself, especially of you did not drink enough fluids while you were out shoveling.
o Warm yourself up with a protein filled soup (like chicken noodle soup or a vegetable lentil soup). Not only will you get warmed up quickly but you will quickly feel your energy level return to normal.

Prepare to Cook Tasty Quick Meals

Introduction

In this day and age, folks are "flying." Some get home from work all tired out and have no one to cook for them. Old folks are light eaters, except for some fat old men like. We want something fast and easy even if we have to cook it ourselves. And we want it to taste good.

My wife does some of the cooking at our house but she notified me on my retirement that she was no longer the cook because she was retiring. I though she was kidding. I do most of the cooking. Well, I have always liked to cook because when I was a little kid my mother taught me to cook and she made it fun. We usually cooked beans and fed the hobos hot bread and beans when they came to the back door.

One time when nobody was home, I decided to cook donuts. My mother came home to a very messy kitchen which she had to clean up. Then she told me how to make real donuts. It was the deep-frying thing that I didn't understand. Did I get scolded for trying to cook donuts. Never! That would have hampered my education.

Here are some hints for preparing good meals in a hurry:

1. Stock Up on Some Goods

It's awful at 10:00 o'clock at night to try to fix something to eat and there is nothing in the cabinet. Keep some things on hand.

I buy most everything in case lots. Our store has a case-lot sale every year, but we can buy anything by the case at any time. I save money that way. For example, I get a buck-a-box off my wife's favorite cereal.

Here is what I stock: canned vegetables and fruits, mushrooms, cooking soups like cream of mushroom and cream of celery, ready-to-eat-soups which I adulterate, chicken broth, cake mixes and frosting because my grandkids expect a cake each and every Sunday, and canned beef, chicken, turkey and tuna. With these items on hand, I can cook up a lot of good basic meals.
I forgot. I also buy canned gravy by the case, beef, chicken or turkey, and pork.

Other things I keep on hand are stewed tomatoes, enchilada sauce, Chinese vegetables. tomato paste, olives because my wife loves them, and noodles for lasagna plus spaghetti and country noodles for chicken and dumpling soup. I also keep a few roles of dough in the refrigerator including cinnamon role dough. And don't for get the tortillas. I like the corn variety. Oh, you will need rice, onions, and garlic, and a collection of spices.

2. Make Quick Soups

Some folks think that you have to cook rice first. That you must keep it under lid for 20 minutes or a gremlin will come out of the earth and eat you up. All you really need to know about rice is that you need at least twice as much liquid as rice and that you have to cook it for 20 minutes any which way you want. You don't have to cook rice before adding the good stuff. Add your onions, garlic, meat, vegetables, soups, gravies, or whatever, and cook it in a frying pan or in a pot. You can make some wonderful dishes without even trying. My wife likes me to stir in some shredded cheese at the end of the process.
Soups are easy.

Chicken and Dumplings
You can take a couple of cans of chicken noodle soup but you won't necessarily like it. It depends on the brand of soup. I suggest that you boil country noodles in chicken broth and cream of celery soup, drop in a can of chicken or turkey meat-don't forget the mushrooms-how about a can of carrots? When it is boiling, drop bits of croissant dough on the top. Keep it boiling under lid for 20 minutes. Wow! You have chicken and dumplings.

Cheese Soups
I keep cheese around the house. It is my wife's favorite food. Start with any canned cream soup. Drop in some carrots. Grate the cheese and stir it in. Season to taste. Yum!

Cream of Potato Soup
I use canned potatoes slices and canned carrots because it is so fast. Drop in a can of cream of celery soup, a can of mushrooms and you are done. Okay, add some onion and garlic. Do you like Chinese vegetables? Drop in a can.

Chowders
I use canned or frozen crab meat or clams, maybe shrimp. I simply put them in creamed soup, maybe add canned carrots or canned sliced potatoes, add grated cheese. That's it! Oh, yes. Don't for get the Old Bay® seasoning.

3. Make Quick Mexican Food

Enchiladas or Tacos
Take some canned meat such as chicken, beef, pork or turkey, toss in a chunk of garlic, some onion, and simmer it in a frying pan. Okay, use leftover meat. Grab a few tortillas. You can quickly soften them by putting them in a frying pan with a little oil. I just put them in the microwave for a few seconds. Roll the meat mixture into the tortillas. Now, just pour a bit of hot enchilada sauce over the top. Now that didn't take long, did it. My wife likes me to toss in chopped olives. Place shredded cheese on top of the enchiladas and melt the cheese in the oven, in a fry pan, or just toss the enchiladas into the microwave for a minute.

If you want tacos, just put the meat mixture into the tortillas and add a bit of chopped lettuce and tomato. Don't for get the cheese. Yes, you can put some salsa on top. Avocados? Why not?

Rice and Beans
You need rice and beans with those enchiladas. I use canned refried beans of the low-fat variety or lintel beans or such. To make Spanish rice just cook your rice in chicken broth for twenty minutes with the good stuff already in it. I add onion, green tomatoes from my garden, garlic, and such. You decide. I like green chilies either fresh or from the can.

Mexican Soup
Make any soup and add enchilada sauce and green chilies. Aye! Aye! Aye, Aye! Did you add hot peppers?

4. Make These Quick Meals

Chef Salad
Chop up part of a head of lettuce. Add some chopped onion. Cube some ham and some cheese. Drop those in. Add some croutons-not the hard kind that break your teeth. Mix in your favorite dressing. That's it. Well, I like toast too. This is a good time to mix orange juice with lemon-lime pop. It makes a nice drink.

Hot Roast Beef or Turkey Sandwich
Toast some bread. I like mine buttered. Place meat from a can or a package or leftover meat on the toast. You may want to quickly heat the meat in a fry pan or in the microwave. Pour hot canned gravy over the mixture. Slice some tomatoes from your garden if you've got them. You can buy chicken-ala-king by the can. You simply pour that over the toast-yes, heat it first.

Rice Dishes
Some folks think that you have to cook rice first. That you must keep it under lid for 20 minutes or a gremlin will come out of the earth and eat you up. All you really need to know about rice is that you need at least twice as much liquid as rice and that you have to cook it for 20 minutes any which way you want. You don't have to cook rice before adding the good stuff. Add your onions, garlic, meat, vegetables, soups, gravies, or whatever, and cook it in a frying pan or in a pot. You can make some wonderful dishes without even trying. My wife likes me to stir in some shredded cheese at the end of the process.

5. Spaghetti

I love spaghetti. My wife won't eat tomatoes very often, so I often cut up green tomatoes which she can't recognize as a tomato. The other day I saw some wonderful fresh Italian sausage in the local grocery. I couldn't resist it. I bought the mild variety because I am chicken. It had some tiny hot spots so I did get the gist of the hot stuff.

First I baked the sausage at 350oF for 40 minutes while I watched the football game. I then fried garlic and basil, and onions and green tomatoes, and added the sausage. My wife took the good stuff from the bottom of the dish I cooked the sausage in and added it to my sauce. Finally, I added canned beef gravy to make the sauce. I added apple juice. I boiled the spaghetti, drained it and coated it with butter and Parmesan cheese, and we were ready to eat.

I always season spaghetti with basil. I never add oregano. Many Italians stay away from that stuff. One thing that could help the sauce is cooking wine. We don't have wine at our house so I added apple juice to the sauce. Wow, that spaghetti was good.

I like spaghetti sauce with tomatoes and tomato paste, even stewed tomatoes or Italian stewed tomatoes, but I don't make such very often because of my wife. She likes spaghetti noodles with just butter. That is what she has to eat when I make regular spaghetti and her temptation is not overcome by my sauce. Lasagna is just layers of freshly boiled lasagna noodles with cheese and spaghetti sauce (meat in the sauce) in between. You have to bake it. Put cheese on top, preferable at the end of the bake. No, I'm not much for Spinach Lasagna or Eggplant Parmesan.

Recipes Of Romanian Cuisine - A Balm For Your Senses

Romanians have a particular way of cooking, and their food is absolutely delicious if you get it in the right place and it is cooked the right way. Romanian restaurants can be found nowadays all over the world and they serve the best traditional Romanian food made by Romanian cooks after special recipes of Romanian cuisine.

Before big important holidays like Christmas and Easter or others, Romanians have a fasting period, which means no animal products are allowed on the table. That means that for some well-determined days they can purify their body, as fasting periods are not for eating fat, not for eating eggs nor other type of animal products. Sometimes, on particular Sundays of the fasting periods, which are determined and written down in the orthodox calendar, Romanians are allowed to eat fish.

What the fasting period does is prepare the body for the fat and delicious food, which is cooked in every house for the holidays. Women and men start cooking the food days before the holiday, especially before Christmas, when the pork is the basic element for the traditional food. There are all sorts of products made of pork, traditional sausages and others. No part of the pig remains untransformed. The condiments used in preparing the meat are the usual ones, salt, pepper, garlic etc. but the Romanian cooking recipes are special.

If you visit a Romanian restaurant, you can enjoy all the delights of the traditional Romanian food. Ask the waiter to recommend you something or just try the famous stuffed cabbage with "polenta" and sour cream. The noodle traditional soups and "ciorba" (broth) are famous all over the world.

Also, if you happen to have Romanian friends, ask them to tell you about all the beautiful customs that make the holidays brighter. About all the Christmas carols and the New Year poems that are said on the first day of the new year by groups of men and boys, who go from house to house to give joy and happiness as well as a lot of positive energy and thoughts to the hosts.

If you are trying to excite your senses, do not avoid trying out the Romanian food. Recipes for Romanian food can be found online too; all you have to do is use a search engine the right way and start cooking. It is not hard at all and the results will be absolutely to your satisfaction. Dare to taste the Romanian products and if you ever have the chance, visit that beautiful country.

Not only the food, but also the attitude of the Romanians is one to enjoy - they are very hospitable and generally have a positive attitude towards life itself. The surroundings, especially in the mountains and the sights are amazing and you can find nice restaurants all over the country. Plenty of food to enjoy, and it is delicious. You will have to be careful though because you might gain weight very fast.

No matter if you try it at home, or at your friend's house or anywhere else in the world, Romanian food is great and very tasty. Find Romanian cooking recipes and make them a part of your life as well as a part of your family's lives. Your family will enjoy and surely appreciate it!

Apple Pie Recipes

The delightful aroma of apples baking in the oven always reminds me of mom making those delicious desserts. I could almost taste the pie before it even came out of the oven. You can get that same down home feeling at your house with these easy apple pie recipes.

Apple Pie Recipe 1

Ingredients:

5 large apples, grated

1/2 cup sugar

1 teaspoon cinnamon

Pinch of salt

1 tablespoon lemon juice

2 tablespoons flour

1/2 stick butter, sliced

2 frozen pie crusts, or 1 deep dish pie crust

Directions:

Combine the apples, sugar, cinnamon, salt, lemon juice and flour. After thoroughly mixed, pour into 2 frozen pie crusts or 1 deep dish pie crust. Place 1/4 stick of butter on each pie. Bake at 350 degrees for 1 hour.

Apple Pie Recipe 2

Ingredients:

1 cup flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup water

2/3 cup shortening

1 egg

21 ounce can apple pie filling

1 tablespoon lemon juice

Directions:

Combine flour, sugar, baking powder, salt, water, shortening and egg. Blend well at low speed on mixer, then beat 2 minutes at medium speed. Spread batter into a 9 or 10 inch deep dish pie pan. Mix lemon juice into apple pie filling and spoon this mixture into the center of batter, but do not stir. Bake at 425 degrees for 40 to 45 minutes.

Apple Pie Recipe 3

Ingredients:

20 ounce can sliced pie apples or 5 to 7 fresh apples, sliced

2 tablespoons flour

1/8 tablespoon salt

3/4 to 1 cup sugar

1/2 tablespoon cinnamon

1/8 tablespoon nutmeg

Directions:

Combine all ingredients except for apples and mix well. Add apples and mix in. Pour into an unbaked pie shell and bake at 400 degrees for approximately 50 minutes.

Slow Cooking in a Crock Pot

In a Wal-Mart store, a short while ago, I was surprised to see boxes and boxes of crock pots of all sizes, prices, and descriptions stacked for sale - in men's wear yet!

Then I discovered that they were everywhere. Crock pot cooking is enjoying a comeback. In difficult times, the tried and true is revived.

High Heat Vs Slow Cooking

Cooking meat, using a hot stove top or oven requires the best, high quality cuts of meat in order to produce good results. Lower quality cuts are more likely to result in tough, stringy meals.

Cooking a roast on a lower heat setting for 6 to 12 hours allows you to take advantage of the cheaper cuts of meat. Roasts emerge moist and tender with all of the food values and flavours of the ingredients intact.

Follow the recipe you want to use, placing the veggies on the bottom of the pot, the meat on top of that, and let it do its own thing. You are done.

Most types of bacteria are killed at 140F degrees. Crock pots, by designed, operate at around 240F degrees on low setting, and 300F degrees on high. Crock pot cooking is safe.

It allows you to use the same low and slow method our forefathers used before electrical energy was available. They prepared a pit, building a bed of coals and buried a dutch oven to bubble away for a full day.

Today, you can prepare a wide range of meals in the crock pot, including cakes and desserts. Personally, I like to make my own bread because I can put my own selection of ingredients in the dough - raisins, nuts, fruit, etc, and I know that it is not chock full of trash that I don't need. Bulk food stores are amazing resources for ingredients.

I make a no knead bread recipe, using the crock pot liner as an oven utensil. The first time I put it in the oven at 450F degrees, I removed a very handsome loaf of bread. I also melted the plastic knob on the glass lid - so had to replace it with a wooden one. Just like a man, bumbling around.

Preparing a crock pot meal is very simple. Pick your recipe, load the crock pot according to instructions, calculate you start and stop times, crank it up and go. You can set it on high in the morning and come home to a steaming and delicious meal all ready to place on the table.

Being a senior citizen and a naturally lazy male, I often start the cooker in the late evening. It bubbles away all night and I awaken to my house filled with delicious aromas. I place the cooked food into containers, refrigerate, and I have my meals ready for the day. Simple, lip smackin' good. No fast food on the planet can match the flavour.

The tasty variations are particularly good because I choose to virtually eliminate salt from my diet and use herbs and spices as flavour enhancers instead.

Crock pot cooking is also a marvelous opportunity for family involvement. Loading the cooker is so easy that almost any child can get in there right up to the elbows and help. Good health, lots of giggles, and cementing family togetherness is great "stuff."

I have a small model, over 20 years old that still works just fine. Today, that same model sells for around $15.00. I bought the new, larger one, specifically to get the bigger capacity, and removable liner, to make my bread in the oven. It set me back $39.00.

A crock pot draws a very small current as compared to the kitchen range. It is the least expensive, most cost effective major appliance in my kitchen - about 5% of what I paid for the stove. As a senior citizen, that is important to me.

Now you really can shop in the perimeter aisles of the supermarket, where the more healthy and nutritious food lives. You can create serious family meals with the kinds of ingredients that all the health gurus insist you need for optimum health and weight management..

Try one, you'll like it, and you will recover the cost in a very short period of time by using the less expensive ingredients.

Tasty food, minimal effort, and easy on the budget. It just does not get a lot better than that these days.

Summer Salads

Green vegetables are the food most missing in modern diets. Nutritionally, greens
are very high in calcium (120 -190 mg per cup!) They're also high in magnesium,
iron, potassium, phosphorous, zinc, and they are a power house for Vitamin A, C, E
and K. Believe it or not, they are also crammed high with fiber, folic acid, chlorophyll
and many other micro-nutrients and phyto-chemicals - you just can't get any better
than this. Take a look at the following two recipes to help move you into a
sensational summer!

Sensational Summer Salad

For a summer snack that will cleanse the kidneys and help the body to unload toxic
wastes from the blood, use the following high powered recipe.

1/2 cup of watercress

1/2 cup of dandelion greens

1/2 cup of arugula

1/4 cup lemon juice

1/2 tsp grated ginger

pinch of Sea Salt

Mix washed greens together.

Stir lemon juice and ginger.

Pour over greens.

Season with salt.

Tomato Basil & Feta Salad

This is a simple salad that requires no salad dressing.

2 cups tomatoes, diced

1/4 cup red onions, finely chopped

2.25 ounces sliced black olives

3 tablespoons chopped fresh basil

1/4 cup crumbled feta cheese

1 tablespoon lemon juice

1/4 teaspoon salt

Add all ingredients in a medium serving bowl and toss!

Slackers Need Not Apply

Ever been in a department store and wonder how they stay in business
with such useless help? You expect more from a highly paid management team of a major corporation.

In some Fortune 1,000 companies it appears to an outsider the CEO is on sabbatical, while the executives are occupying themselves watching the New York Stock Exchange results on CNBC. But we challenge our own thoughts, refusing to believe statistics citing up to 80% of executives consistently disengaged from their profession.

Gallup Study

In 2004 Gallup release a major U.S. study indicating only 26% of a work
force is dedicated to quality and company growth. The other 74% are
unmotivated and not energized about producing a positive daily result.

Fear of dismissal does not seem to threaten employees in the Knowledge
Economy, they commonly land on their feet with improved benefits and a raise. Gallup does not offer solutions, only conclusions.

Another Gallup survey of employees in Great Britain in 2003 reported 19% as fully engaged in their occupation, and 81% floating in the cosmos of on-the-job game playing.

An Engaged Brain

If you want to live into your 80s without Alzheimer disease or other forms of
dementia, Robert S. Wilson, of Rush Memory and Aging Project in Chicago,
strongly suggests using your noodle for learning new skills and information processing.

Rush University Medical Center spent 5 years annually testing the same 700 folks over the age of 80, for signs of Alzheimer disease. The results indicate those who
were cognitively active and mentally alert, reading, and writing, beat the odds of old age dementia by 50%.

Research your hobbies at the public library, visit the latest Metropolitan museum exhibit, and discover the uniqueness of visiting foreign cities. These activities help keep your brain alert and active. Some believe it extends longevity up to an additional ten years.

The experts conclude it is what you do past retirement to keep your mind active,
that produces the firewall against dementia. Watch Jeopardy, play Bridge, travel,
and most of all be aware of the axiom, use it or lose it.

Consider your brain a muscle requiring daily exercise, or be prepared to face amnesia and its degrading symptoms. This report appeared June 28, 2007, so consider it the latest scientific research.

Directed Mental Effort

Woody Allen said, My brain is my second favorite organ. The author suggests the #1 mind attribute is the ability to choose to pay attention. When you use your volition,
the power of choice, to focus your attention away from negative behaviors toward
positive ones consistently, you create a new mental habit.

According to Jeffrey M. Schwartz of UCLA School of Medicine, you have the power
to shape your brain, and therefore your destiny. Use your attention, (with strong feeling and positive expectation) to move your mind to autopilot; it helps you reach your personal objectives. Focused attention is the secret of successful executives.

Dr. Schwartz goes on to say, choosing what you pay attention to determines the activity of your brain. It is a fact that attention suppresses (inhibits) distractions
that undermine your skills and learning abilities.

A good example is paying attention to a specific conversation, causes a dozen others to fade from your mind as distractions.

It is DME (Directed Mental Effort) that permits you to overcome negative personal
behaviors. Most folks quit paying attention too soon; persistence and determination
give birth to new positive habits of behavior. It is your mind that chooses, not the environment or your brain.

Labeling Your Feeling

When you give a name to your feeling, (I am sad, depressed or angry) you put the brakes on structures in the brain controlling your emotions. Just putting your feelings into words, inhibits your escalating impulsive behaviors.

Dr. Mathew Lieberman, UCLA, had his work published in the journal, Psychological Science. It is the amygdala, the brain structure controlling
fear, panic and powerful feelings, that is suppressed by labeling your emotions.

It dampens down the ongoing emotional circuits, instead of letting your temper
excite you to a higher level of anger, depression or panic. What happens is your
amygdala is inhibited, while your ventrolateral prefrontal cortex (for impulse
control) takes over. It is stomping on the brake instead of the accelerator
to stop at the Red Light. Dr. Lieberman used fMRIs to prove his research.

It is labeling our feelings, not searching for Freudian insights, nor discovering
the meaning of life; it is not learning your purpose in the cosmos that counts,
just labeling your emotion with a name.

Do it and you improve how you feel. It is your prefrontal contex
that confronts the amygdala and shuts it down.
