The greater of the variety of cheese that is used, the more unique the final flavor will be. By slow toasting the last piece or heal of the bread, you can create your own bread crumbs. Mix the cheese sauce with the pasta, top with bread crumbs and slow bake in a medium temperature oven for twenty minutes. You can garnish as you please and serve with cracked black pepper.

Two Very Different Recipes For Waldorf Salad

I wonder if the chef at the old Waldorf-Astoria Hotel in New York City had any idea of the excitement his simple apple salad, named for the hotel, would create. I don't know which recipe for this salad was his original but the many variations are a tribute to his ingenuity. Waldorf Salad has become a staple on many holiday tables. I remember in my family it just didn't seem like Thanksgiving unless one of my aunts brought her Waldorf Salad to my grandparents house. But it is actually a good year-round salad, excellent for picnics, reunions, potlucks and many other occasions. Here we offer two very different vintage recipes for this simple, tasty "apple" salad. For the persons who tend like simple unadorned foods, we have a "Simple Waldorf Salad". For those who like things with more extras, we offer the dressed up version. Perhaps one will grace your table soon. Both are very tasty.

SIMPLE WALDORF SALAD

3 cups diced red delicious apples
1 tbsp lemon juice
1/2 cup diced celery
1/4 cup walnut pieces
1/3 cup mayonnaise

Toss the apples with the lemon juice to avoid discoloration. Add the celery, walnuts, and mayonnaise. Mix well. Refrigerate until serving time.

DRESSED-UP WALDORF SALAD

6 medium red apples, diced
1 cup diced celery
1 cup grapes
1/2 cup chopped walnuts
1/2 cup golden raisins
3/4 cup salad dressing
1 cup miniature marshmallows
1 tbsp sugar

Combine all ingredients in a large bowl and toss until coated.

Yield: 10 to 12 servings.

Potato Salads - Three Easy, Healthful Recipes

Potato salads are not just for picnics! They're good year-round, and the variations are endless. Try adding chunks of red-skinned potatoes to just about any tossed salad recipe, or make your own versions of my recipes by adding any other ingredients you like.

I never peel potatoes for salads. The skins of the red ones are pretty in a salad and if you throw them away, you waste their fiber. Just scrub the potatoes with a plastic scouring pad.

Favorite Potato Salad

6 red potatoes

1/2 cup chopped celery

1/4 cup chopped onion

1/2 cup non-fat yoghurt

1/4 cup dijon mustard

2 teaspoon celery seed

1/4 cup snipped fresh dill

Freshly ground pepper to taste

1/2 cup no-fat mayonnaise

Boil the potatoes until just tender, about 20 minutes. Cool and dice. Combine with the remaining ingredients except the mayonnaise and chill at least 30 minutes. Mix in mayonnaise just before serving.

4-6 servings

Green Bean-Potato Salad

1 pound green beans

1 pound red potatoes, preferably tiny baby potatoes

1 red onion, chopped

1 clove garlic, minced

2 tablespoons wine vinegar

1 tablespoon fresh oregano leaves (or 1/2 teaspoon dried)

Freshly ground pepper to taste

1/2 cup no-fat yogurt or mayonnaise

Cut the green beans in 1" pieces and steam until they are crisp-tender. Cut the potatoes into ½" cubes (leave baby potatoes whole) and cook them until they are just tender, about 10-15 minutes. Drain, rinse in cold water to stop the cooking; chill. When ready to serve, toss the potatoes with the remaining ingredients.

4-6 servings

New Potato Salad

For the dressing:

1/2 cup yogurt

2 tablespoons Dijon mustard

2 tablespoons balsamic or rice vinegar

2 teaspoons fennel seeds

Freshly ground black pepper, to taste

For the salad:

1 pound tiny red new potatoes

1 red bell pepper, chopped

2 stalks celery, chopped

1 bunch green onions, sliced (white part)

1/2 cup chopped Italian parsley

Combine the dressing ingredients.

Cook the potatoes in boiling water to cover for about 10 minutes or until just tender. Drain and rinse them with cold water to stop the cooking. If they are larger than bite-size, cut them in halves or quarters. Combine the potatoes with the remaining salad ingredients, stir in the dressing and serve, or chill for later.

Tasty Old Fashion, Economical Casserole Recipes

Wintertime is a great time for casseroles. It is a perfect time to use the oven as it can spread warmth throughout the house. The warmth, the delicious aroma wafting through the house, and you with your feet up while your meal cooks without your assistance! And one of the best things about casseroles is that they are economical. Here are two very different casserole recipes to add to your recipe box. This Spanish Rice Casserole is made with bulk sausage and rice. The Chinese Noodle Hamburger Casserole uses Chinese noodles and ground beef, as the name implies.

SPANISH RICE CASSEROLE

1 lb bulk sausage
1 1/2 cups uncooked rice
1 onion, chopped
2 beef bouillon cubes
2 cups boiling water
1 can tomatoes
3 tsp chili powder
1/2 tsp garlic powder
5 slices bacon, cut-up

Preheat oven to 350 degrees.

Cook sausage until brown; crumble and drain. Combine rice and onion; brown lightly in reserved drippings. Dissolve bouillon in boiling water. Combine sausage, rice mixture, bouillon, tomatoes, chili powder and garlic powder; mix well.

Spoon mixture into a greased casserole dish. Bake at 350 degrees for 20 minutes. Place bacon over the rice and bake another 35 minutes.

CHINESE NOODLE HAMBURGER CASSEROLE

1/4 cup butter
1 lb extra lean hamburger
1 cup chopped yellow onion
1 cup chopped celery
1 cup chopped green bell pepper
1 can condensed tomato soup
1 can condensed cream of mushroom soup
1 can Chinese noodles

Brown meat, onions, celery and bell pepper in a skillet in the butter. Add the soups and simmer for 30 minutes. Add Chinese noodles and mix well. Pour into a lightly buttered casserole dish and bake at 350 degrees for 30 minutes.

Romanians have a particular way of cooking, and their food is absolutely delicious if you get it in the right place and it is cooked the right way. Apple Pie Recipes

The delightful aroma of apples baking in the oven always reminds me of mom making those delicious desserts. I could almost taste the pie before it even came out of the oven. You can get that same down home feeling at your house with these easy apple pie recipes.

Apple Pie Recipe 1

Ingredients:

5 large apples, grated

1/2 cup sugar

1 teaspoon cinnamon

Pinch of salt

1 tablespoon lemon juice

2 tablespoons flour

1/2 stick butter, sliced

2 frozen pie crusts, or 1 deep dish pie crust

Directions:

Combine the apples, sugar, cinnamon, salt, lemon juice and flour. After thoroughly mixed, pour into 2 frozen pie crusts or 1 deep dish pie crust. Place 1/4 stick of butter on each pie. Bake at 350 degrees for 1 hour.

Apple Pie Recipe 2

Ingredients:

1 cup flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon salt

3/4 cup water

2/3 cup shortening

1 egg

21 ounce can apple pie filling

1 tablespoon lemon juice

Directions:

Combine flour, sugar, baking powder, salt, water, shortening and egg. Blend well at low speed on mixer, then beat 2 minutes at medium speed. Spread batter into a 9 or 10 inch deep dish pie pan. Mix lemon juice into apple pie filling and spoon this mixture into the center of batter, but do not stir. Bake at 425 degrees for 40 to 45 minutes.

Apple Pie Recipe 3

Ingredients:

20 ounce can sliced pie apples or 5 to 7 fresh apples, sliced

2 tablespoons flour

1/8 tablespoon salt

3/4 to 1 cup sugar

1/2 tablespoon cinnamon

1/8 tablespoon nutmeg

Directions:

Combine all ingredients except for apples and mix well. Add apples and mix in. Pour into an unbaked pie shell and bake at 400 degrees for approximately 50 minutes.

Super Bowl Party Appetizer Recipes

Well, the big game is near and you are having people over. What kind of Super Bowl party snacks should you serve to keep a house full of HUNGRY guests satisfied? Well, here are a few ideas to get the ball rolling.

Most of the best snacks and appetizers are very simple to make. You can dress up any recipe, any way you like to make it more fitting for your taste. I have provided a few great Super Bowl appetizer recipes below to get you going:

My grilled jalapeno popper recipe is simple, but people can't get enough. Pick up some of your favorite BBQ sauce to dip these little babies in. It is best to eat them hot and dip in cold sauce!

1. Grilled Jalapeno Popper Recipe:

Ingredients:

36-Pickled jalapenos
1-8oz. package of cream cheese
1-Pound thinly sliced bacon
64-Toothpicks

Recipe:

1. Cut each jalapeno in half, length-wise, then remove the seeds
2. Fill each jalapeno with cream cheese. Put enough cheese to fill the jalapeno, but not too much
3. Cut the package of bacon in half, and then wrap each jalapeno, stuffed with cheese, with a strip of bacon, securing with a toothpick by pushing it through the bacon, cheese, jalapeno, then back out through the other side.
4. Grill over medium high heat until bacon is done.
5. The best way to grill them is to use a fish griller so you can grill many poppers at the same time, and turn them over with ease because they are clamped in the griller.

My grilled shrimp recipe will have people talking for days! These are good by themselves. Stick a few next to the Jalapeno Poppers and you will have an appetizer tray fit for a king.

Ingredients:

1-Pound Large Gulf Shrimp(13/15 Count) (Peeled and Deveined Tail On)
1/2-Cup Olive Oil
2-Tbsp Worcestershire Sauce
2-Tbsp Brown Sugar
1-Tbsp Tabasco Soy Sauce
1-Finely Chopped Jalapeno
1-Tbsp Honey
1-Tsp Garlic Powder
1-Tsp Onion Powder
2-Limes

Recipe:

1. Combine all ingredients including only the juice of one lime
2. Mix well
3. Add shrimp and coat evenly.
4. Refrigerate for 30 minutes, stirring at 15 minutes to make sure the shrimp are coated evenly
5. Place on skewers, and grill on medium heat for 3-4 minutes, turning once.
6. They cook very fast, and when they are pink, they are done.
7. Take them off the skewers, sprinkle them with juice from the other lime, and serve.

Selections of Quick and Easy Recipes for Students and 'Struggling' Cooks!

It's that time again when our off-spring have gone off to University and Student Life full of excitement at the prospect of wall to wall freedom and fun!

As parents we hope they will fit at least SOME studies into their busy student schedule of late night partying and long lie-ins!
We have to accept the last thing on their minds for a few weeks is going to be using the kitchen.

However, once they have settled into their new routine, it can be surprising how they can cope with cooking when they realise they need to economise if they want BEER MONEY!

When my own youngest 'flew the nest' last year I tried to find a recipe/cook book to pack which explained cooking from scratch for someone who hardly knew the difference in a kettle and a saucepan! Well! That's a bit exaggerated but you know what I mean!
I couldn't find what I wanted so I set about composing a selection of easy recipes with step by step instructions with students in mind. I had a fair idea, from the questions she asked, what kind of information would be needed.

Hey Presto! Bingo! I got her cooking and she can now rustle up a decent meal with little effort!
Apparently her friends have joined the cooking revolution and are pinching the recipes! They now have a nice little cooking 'rota' going in the shared house.

RESULT? My Student daughter can cook and follow recipes competently, eats MORE healthy food and LESS fast food and her mother is happy!! I don't even mind the bags of dirty laundry!

Garlic: It may sound like a cliché, but this humble bulb has a place in just about all-Italian cooking. Keep it in a cool, dry place such as a root cellar or pantry. When buying garlic, look for bulbs with no dark discoloration on the bottom. This may indicate age or molding.

Tomato sauce: Don't go expensive here. The house brand at your local grocer and the national brands will be impossible to tell apart if you put them in a bowl. Avoid the "preseasoned" blends, as you'll be adding your own herbs and spices to your recipe.

Pasta: Don't buy a huge amount of any one specific noodle. Rather, keep a small amount of the most common types, such as spaghetti, linguine, elbow macaroni, small and large shells and wide egg noodles. For storage, it helps if you can keep long noodles in a long container. Most plastic ware makers have a "pasta keeper" of some sort available.

Parmesan cheese: While it may not always be an ingredient, freshly ground Parmesan is almost always a welcome addition on top of a pasta dish. Kraft has a new "fresh shreds" product with a block of cheese in a container with its own grater. It works very well, and the price is not exorbitant.

Olive oil: One mistake many Italian-food rookies make is using expensive extra-virgin olive oil for things like pan-frying. Use standard olive oil, which will be yellow in color and as much as 50 percent cheaper, for these purposes. You'll still get all the health benefits!
